Maple Pumpkin Pancakes

It’s officially fall, so we’re of course obsessing over everything pumpkin flavored. But a lot of the delicious treats we’re seeing are full of unhealthy ingredients. So, we whipped up a better-for-you pancake recipe featuring our Maple Pumpkin Super Creamer that’ll satisfy all your pumpkin desires and leave you still feeling your best! 

With just a few ingredients, these pumpkin pancakes make an easy addition to your weekend brunch spread. 

This recipe is gluten free, dairy free, and low carb.

Description

Spice up your weekend brunch with these better-for-you pumpkin pancakes! With just a few ingredients, they make the perfect healthy fall treat. Makes 2 servings.

Ingredients

  1. ¾ cup almond flour
  2. 1 tsp baking powder
  3. 2 eggs, beaten
  4. 2 tbs butter, plus 1 tbs for cooking
  5. ¾ cup Maple Pumpkin Super Creamer

Instructions

  1. Combine almond flour and baking powder. 
  2. In a separate bowl, combine eggs, butter, and Maple Pumpkin Super Creamer. 
  3. Mix the flour mixture with the egg mixture. 
  4. Pour a fourth of the pancake batter into a buttered skillet on medium heat. Repeat for 4 pancakes.
  5. Flip pancakes after approximately 4 minutes. 
  6. Top with butter and your favorite syrup. Maybe a sprinkle of pumpkin pie spice too! Enjoy!
