These blueberry baked donuts are gluten-free, paleo, and dairy-free.

Description

We created a healthier version of the classic baked treat featuring Blueberry Latte Super Coffee or French Vanilla Super Coffee! This recipe is gluten-free, paleo, and dairy-free. Makes 12 donuts.

Ingredients

  1. 2 cups almond flour
  2. 1 teaspoon baking powder
  3. 1 teaspoon baking soda
  4. ¼ cup coconut oil, melted
  5. ¼ cup maple syrup
  6. 2 egg whites 
  7. ½ cup French Vanilla Super Coffee 
  8. 1 teaspoon vanilla extract 
  9. ¼ cup fresh blueberries 

Optional Glaze:

  1. 2 Tbsp Coconut Oil, melted
  2. 2 Tbsp Maple Syrup 
  3. 1 tbsp Blueberry Juice

Or 

  1. 2 tbsp Powdered Sugar
  2. 2 tbsp Blueberry Latte Super Coffee
  3. 1 tbsp Blueberry Juice

Garnish with fresh lemon zest.

Instructions

  1. Preheat the oven to 350 F. Spray a donut pan with nonstick cooking spray.  
  2. Combine almond flour, baking powder and baking soda. 
  3. Add coconut oil, maple syrup, egg whites, French Vanilla Super Coffee, and vanilla. 
  4. Fold in fresh blueberries. 
  5. Fill each donut mold about ¾ of the way full. Bake for 17 minutes. 
  6. Remove from the oven and allow to cool on a wire rack. Makes 12 donuts.
